Is a soup made from diced beef tripe slow-cooked with vegetables such as carrots, potatoes, cassava, cilantro, garlic and peas. The dish is generally prepared in former Spanish colonies in Latin America, Caribbean, and in the Philippines. This is our Colombian Version of Mondongo.
